Recipe for cooking crawfish tortellini

Crawfish Tortellini


2 (10 oz.) pkg.s Parmesan cheese
    tortellini, cooked as directed
1/2 C. (1 stick) butter
1 med. onion, chopped finely
2 cloves garlic, chopped finely
1/2 C. Parmesan cheese
1 C. whipping cream
2 tsp. cornstarch, mixed with 1/4 C. cold water
1/8 C. chopped parsley
1 lb. crawfish tails


Cook tortellini as directed on pkg.. Drain and set aside. Saut onion and garlic in butter until clear. Add slightly rinsed crawfish tails. Cook for 5 min.


Add parsley, cornstarch mixture and whipping cream. Cook just until it starts to simmer. Fold tortellini into sauce. Salt and pepper to taste. Place in lightly buttered casserole pan, sprinkle with Parmesan Cheese. Bake at 350 degrees F until hot.


Servings 6.


Serve with salad and hot French Bread.
