Citrus-Cherry Pork and Pasta


1 lb. pork tenderloin, cut into 1/2-in. cubes
1 tsp. canola oil
1/2 sweet yellow onion, thinly sliced
2 Tbsp. orange juice
2 Tbsp. balsamic vinegar
2 Tbsp. extra virgin olive oil
1/4 tsp. salt
1/4 tsp. black pepper
1 Tbsp. grated orange zest
8 oz. mostaccioli, rigatoni or penne,
    cooked and drained
1 C. broccoli florets, steamed
1/2 C. dried cherries
1/3 C. walnuts, coarsely chopped


In a lrg. nonstick skillet, heat oil over med.-high heat. Add pork cubes and onion; cook and stir 3 to 4 min. or until pork is nicely browned and onion is tender; set aside.


Make dressing by shaking together orange juice, vinegar, extra virgin olive oil, salt, pepper and orange zest in a sm. jar with tight-fitting lid. In a lrg. servings bowl, toss together the pork and onion, pasta, broccoli, cherries and walnuts with the dressing.


Serve immediately.
