Quick Meals- Salads and Pasta :: Pasta Recipes
1 C. chopped onion
1 C. sliced fresh mushroom
1 C. sliced zucchini
1/2 C. chopped celery
1 clove garlic, minced
3 Tbsp. butter or butter replacement, melted
1 (14 1/2 oz.) can whole tomatoes, drained and chopped
1 tsp. dried whole basil
1/2 tsp. salt
1/4 tsp. crushed red pepper
8 oz. shell macaroni, uncooked
3 C. chopped cooked chicken
1 1/2 C. whipping cream
8 oz. shredded Monterey jack cheese
1/2 C. grated Parmesan cheese
Saut first 5 ingredients in butter until vegetables are crisp-tender. Stir in tomatoes, basil, salt and crushed red pepper; set aside.
Cook pasta according to pkg. directions; drain. Mix together pasta, vegetable mixture and chicken in a lrg. bowl; spoon mixture into an 11 x 7-in. baking dish.
Mix together whipping cream and cheeses in a med. saucepan; cook over low heat until cheese melts, stirring frequently. Pour sauce over pasta mixture. Bake, covered, at 350 degrees F for 40 to 45 min. or until thoroughly heated.
Makes approximately 6 to 8 servings.
