1 lb. lean ground beef
1 med. onion
1 (16 oz.) can mixed vegetables
1 (10 oz.) can Ro*Tel tomatoes and green chiles
1 (13 oz.) can Spanish rice
1 (14 1/2 oz.) can stewed tomatoes
1 (17 oz.) can cream-style corn
Brown lean ground beef and onion lightly in a 4-qt. kettle. Add remaining ingredients; cover and simmer for 40 min.
