Macaroni and Ham Salad
Salad
5 to 6 lb. fully cooked ham, cubed
5 to 6 lb. macaroni cooked and drained
3 lb. shredded Cheddar cheese
2 (20 oz.) bags frozen peas, thawed
2 bunches celery, chopped (about 12 C.)
2 lrg. onions, chopped (2 to 2 1/2 C.)
2 (5 3/4 oz.) cans pitted ripe olives, drained and sliced
Dressing
2 qt. mayonnaise
1 (8 oz.) bottle Western or French salad dressing
1/4 C. vinegar
1/4 C. sugar
1 C. light cream
1 1/2 tsp. onion salt
1 1/2 tsp. garlic salt
1 tsp. salt
1 tsp. pepper
Mix together all salad ingredients.
Mix together all dressing ingredients and mix well. Pour dressing mixture over macaroni and ham mixture and toss. Refrigerate.
Makes approximately 100 servings.
