Salad Dressings :: Low-Fat Salad Dressing
1/4 C. low-sodium chicken broth
1 Tbsp. minced red bell pepper
1 Tbsp. chopped basil
1 Tbsp. white wine vinegar
2 tsp. extra virgin olive oil
1/2 tsp. grated lemon zest
1/2 tsp. salt
1/2 garlic clove, minced
1/4 tsp. dried oregano leaves, crumbled
1/8 tsp. freshly ground pepper
In a jar with a tight-fitting lid, Mix together all the ingredients; cover and shake well. Refrigerate, covered, overnight. Shake again before servings.
Makes approximately 4 servings.
