Oriental Chicken and Spinach Salad

Dressing
1/4 C. canola oil
3 Tbsp. rice vinegar
1 Tbsp. Sugar replacement
1 Tbsp. light soy sauce
1 tsp. dark sesame oil
3/4 tsp. grated gingerroot Salad:
1 bag (6 oz.) baby spinach leaves
2 C. cooked cubed chicken breast
1 can (11 oz.) mandarin oranges, drained
1/2 C. sliced water chestnuts
1/4 C. thinly sliced green onions
1/4 C. toasted slivered almonds
*May substitute 2 1/2 packets Sugar replacement
For Dressing, whisk all ingredients until Mix togetherd. Refrigerate, covered, 1 hr. to allow flavors to blend.
For Salad, gently toss all ingredients in lrg. salad bowl. Add dressing and toss to Mix together.
Makes approximately 6 servings (1 1/2 C.)
