Cucumber Tomato Salad

1/2 C. rice vinegar *
3 Tbsp. Sugar replacement **
3 C. unpeeled 1/4-in. thick sliced cucumbers,
qt.ered (about 2 med.)
2 C. chopped tomato (about 1 lrg.)
1/2 C. chopped red onion
Salt and pepper to taste
*Distilled white vinegar may be substituted for rice vinegar.
** May substitute 4 1/2 packets Sugar replacement
Mix together vinegar and Sugar replacement. Add cucumbers, tomato and onion. Season to taste with salt and pepper; mix well. Refrigerate, covered, at least 30 min. before servings.
