Quick Meals- Salads and Sandwiches :: Lamb Sandwiches
1 lb. lean ground beef or lamb
2 Tbsp. water
1 Tbsp. lemon juice
1 tsp. salt
1/2 tsp. ground cumin
1/2 tsp. dried oregano leaves
1/4 tsp. pepper
2 cloves garlic, crushed
1 sm. onion, chopped
2 Tbsp. canola oil
4 (6-in. diameter) pita breads
2 C. shredded lettuce
1/2 C. plain yogurt
1 Tbsp. snipped fresh mint leaves
or 1 tsp. dried mint leaves
1 tsp. sugar
1 sm. cucumber, seeded and chopped
1 med. tomato, chopped
Mix beef or lamb, water, lemon juice, salt, cumin, oregano, pepper, garlic and onion. Shape into 4 thin patties. Cook patties in oil over med. heat, turning frequently, until done, about 10 to 12 min.
Split each pita bread halfway around edge with a sharp knife. Separate to form pocket. Place patty in each pocket; top with lettuce.
Mix yogurt, snipped mint and sugar; stir in cucumber. Spoon onto lettuce; top with tomato.
