Low-Fat and Low-Calorie Recipes :: Gelatin Desserts
1 sm. box lemon gelatin
1 C. boiling water
1/4 C. cold water
1/4 tsp. rum extract or flavoring
3/4 C. dairy eggnog
1 sm. box cherry gelatin
1 sm. bottle maraschino cherries, drained (save juice)
1 sm. can Mandarin oranges, drained
1 C. boiling water
Dissolve lemon gelatin in 1 C. boiling water. Add 1/4 C. cold water and rum extract or flavoring. Measure 3/4 C. gelatin mixture into med. bowl. Add eggnog. Pour mixture into 6-C. mold. Chill until set, about 25 min.
Meanwhile, dissolve cherry gelatin in 1 C. boiling water. Mix reserved cherry juice with water to equal 3/4 C.. Add to cherry gelatin along with cherries, oranges and leftover lemon gelatin. Carefully pour into mold over set gelatin. Chill until firm.
Unmold and garnish with whole red candied cherries, cut in half, and green cherries, cut in qt.ers, to resemble leaves.
