Low-Fat and Low-Calorie Recipes :: Gelatin Desserts
2 med. cantaloupes
1 sm. box Jell-O (any flavor) or sugar-free Jell-O
3/4 C. boiling water
1/2 C. cold water or ice cubes
1 banana, sliced
Cut the melons into halves lengthwise. Scoop out seeds and drain well.
Dissolve gelatin in boiling water. Mix together water or ice cubes to make 1 1/4 C.. Add to gelatin. Stir until slightly thickened. Remove any unmelted ice. Add banana. Place melon halves in sm. bowls. Spoon in gelatin mixture. Chill until firm.
Cut into wedges. Garnish.
Makes approximately 6 servings.
