Recipe for cooking blackberry cake

Blackberry Cake


1 (18.25 oz.) box white cake mix (with pudding in the mix)
1 sm. box black raspberry flavored gelatin
1 C. canola oil
1/2 C. milk
4 eggs
1 C. fresh or frozen blackberries
1 C. flaked coconut
1 C. chopped pecans


Preheat oven to 350 degrees F.


In lrg. mixing bowl, Mix together cake mix, gelatin, oil and milk. Mix well until blended. Add eggs, one at a time, and mix after each addition. Fold in blackberries, pecans and coconut. Bake at 350 degrees for 25 to 30 min. Cool in pan(s) for 10 min.


Makes approximately 6 to 8 servings.


Icing
1/2 C. butter
1 lb. powdered sugar
5 Tbsp. milk
1/2 C. fresh or frozen (thawed) blackberries
1/2 C. coconut
1/2 C. pecans


Mix together butter, sugar and milk in sm. pan. Stir in berries, coconut and pecans. Heat until butter is melted. Drizzle over cake.
