Low-Fat and Low-Calorie Recipes :: Gelatin Desserts
1 (16 oz.) can shoestring beets
1 sm. box lemon gelatin
3 Tbsp. vinegar
1/2 tsp. salt
1/2 C. grated cucumber
3 Tbsp. grated onion
Drain beets; reserve juice. Heat juice with enough water to make 1 C.. Dissolve gelatin in hot liquid. Mix together all ingredients. Pour into oiled mold and chill until firm.
