Recipe for cooking persimmon salad

Persimmon Salad
4 lrg. ripe persimmons
Lettuce
1 C. diced fresh pears
3/4 C. seedless grapes
1 C. diced fresh pineapple
4 tsp. chopped pine nuts
4 Tbsp. chopped finely walnuts
1 C. mayonnaise thinned with a little fresh
pineapple juice and fresh lemon juice
Cut persimmons into qt.ers, almost to the stem end, and spread apart. Place on a bed of lettuce.
Mix together pears, grapes and pineapple and mound within persimmons. Sprinkle each one with 1 tsp. pine nuts and 1 tsp. walnuts. Serve with mayonnaise.
