Shrimp Jambalaya

1 tsp. extra virgin olive oil
2 oz. turkey kielbasa, halved lengthwise and sliced
1/2 C. onion, minced
1/2 C. green bell pepper, diced
1/2 C. long-grain rice, uncooked
1/8 tsp. salt
1/8 tsp. dried thyme
1/8 tsp. black pepper
1/8 tsp. ground red pepper
1 C. water
1 (10.5 oz.) can low-salt chicken broth
1 (14.5 oz.) can diced tomato, undrained
1/2 lb. med. shrimp, peeled
1/8 tsp. hot sauce
1 Tbsp. fresh parsley, chopped


Heat oil in a med. saucepan over med. heat. Add kielbasa, onion, and bell pepper; saut 5 min. or until vegetables are tender. Add rice; saut 2 min. Add salt and next 3 ingredients; saut 1 min.


Add water, broth, and tomatoes; bring to a boil. cover, reduce heat and simmer 15 min. or until rice is tender.


Stir in shrimp and hot sauce; cover and cook 5 min. or until shrimp are done. Remove from heat; stir in parsley.


Yield: 2 servings (servings size: 2 C.) - 9 WW points per servings
