Pan Seared Red Snapper

2 (4 oz.) fillets red snapper
\n1 Tbsp. extra virgin olive oil
\n1 lemon, juiced
\n2 Tbsp. rice wine vinegar
\n1 tsp. Dijon mustard
\n1 Tbsp. honey
\n1/4 C. chopped green onions
\n1 tsp. ground ginger

Rinse snapper under cold water, and pat dry.

\n

In a shallow bowl, mix together \nextra virgin olive oil, lemon juice, rice vinegar, mustard, honey, green onions, and ginger.

\n

Heat a nonstick skillet over med. heat. Dip snapper fillets in marinade to \ncoat both sides, and place in skillet. Cook for 2 to 3 min. on each side.

\n

Pour remaining marinade into skillet. Reduce heat, and simmer for 2 to 3 \nmin., or until fish flakes easily with a fork.
