Low-Fat and Low-Calorie Recipes :: Fish and Seafood
1 tsp. extra virgin olive oil
5 cloves garlic, minced
2 (28 oz.) cans whole tomatoes, drained and chopped
1/2 C. fresh parsley, chopped and divided
1 1/4 lb. lrg. shrimp, peeled and deveined
1 C. feta cheese, crumbled
2 Tbsp. fresh lemon juice
1/4 tsp. freshly ground black pepper
Preheat oven to 400 degrees F.
Heat oil in a lrg. Dutch oven over med. heat. Add garlic; saut 30 seconds. Add tomatoes and 1/4 C. parsley. Reduce heat; simmer 10 min.
Add shrimp; cook 5 min. Pour mixture into a 13 x 9-in. baking dish; sprinkle with cheese.
Bake for 10 min.
Sprinkle with 1/4 C. parsley, lemon juice and pepper.
Yield: 6 servings.
