Low-Fat and Low-Calorie Recipes :: Fish and Seafood
1 (16 oz.) can salmon, drained, boned and flaked
2 C. fresh bread crumbs
1 sm. onion, chopped finely
1/2 C. Cheddar cheese, shredded
1/2 C. fresh parsley, finely snipped
2 Tbsp. pimiento
3 eggs
1 C. skim milk
1/4 C. lemon juice
Salt and pepper to taste
Mix together salmon, bread crumbs, onion, cheese, parsley, and pimiento in a lrg. bowl; work with your hands or a spoon to mix.
Beat together the eggs, milk, lemon juice, salt, and pepper. Pour and stir into the salmon mixture.
Turn into a greased 1 1/2 qt. casserole. Place salmon casserole in a baking dish that contains 1 in. of hot water.
Bake at 350 degrees F for 1 hr. or until knife inserted in middle comes out clean.
