Low-Fat and Low-Calorie Recipes :: Fish and Seafood
1/3 C. chopped flat-leaf parsley
2 Tbsp. extra virgin olive oil
3 garlic cloves
6 (6 oz.) halibut steaks
1/4 C. plus 1 1/2 tsp. plain dried bread crumbs
Preheat broiler. Line baking sheet with foil.
In mini food processor, Mix together parsley, oil, garlic, and 1 Tbsp. plus 1 1/2 tsp. water; process until chopped finely. Transfer mixture to sm. bowl.
Place fish on prepared baking sheet; spread each fish steak with thin layer of parsley mixture; reserve remaining mixture.
Broil fish 4 in. from heat, 3 min. Remove fish from broiler; leave broiler on.
Add bread crumbs to remaining parsley mixture; stir to Mix together. Pat an equal amount of bread crumb mixture onto each fish steak; broil 3 min. longer, until fish flakes easily when tested with fork.
Servings 6.
