2 lb. whole squid
2 C. boiling water
2 tsp. salt
1/2 C. extra virgin olive oil
1/4 C. lemon juice
1/2 C. sliced red onion
1 clove garlic, crushed
1 Tbsp. chopped parsley
1 tsp. salt
1/4 tsp. pepper
Clean squid. Cut mantle and tentacles into 1 in. pieces.
Place squid in boiling salted water. Cover and simmer for 5-10 min. until tender. Drain and rinse in cold water. Drain.
Mix together oil, lemon juice, onion, garlic, parsley, salt and squid. Cover and let stand for several hr. in the refrigerator.
Makes approximately approximately 2 C. salad. Serve as appetizer.
