Super Salad Recipes :: Fish and Seafood Salads
4 1/2 C. water
1 1/2 lb. fresh, unpeeled shrimp
1 (6 oz.) pkg. frozen snow peas, thawed and drained
6 scallions, chopped
4 med. tomatoes, peeled, chopped and drained
3/4 C. extra virgin olive oil
1/4 C. chopped fresh parsley
1/3 C. wine vinegar
1 tsp. dried oregano
1 1/2 tsp. dried basil
1/2 tsp. garlic salt
1/2 tsp. coarsely-ground black pepper
Bring water to a boil; add shrimp and cook for 3 to 5 min. Drain well. Rinse with cold water. Chill. Peel and devein shrimp. Set aside.
Cook linguine according to pkg. directions, omitting salt. Drain. Rinse well with cold water and drain again. Mix together shrimp, linguine and remaining ingredients; toss gently. Cover and chill at least 2 hr..
