Quick Meals- Salad and Pizza :: Dinner Pizzas
Garlicky Pesto Sauce
2 C. fresh basil leaves
1 C. pine nuts
1/2 C. Parmesan cheese
1/2 C. extra virgin olive oil
1 Tbsp. freshly minced garlic, more or less if desired
Fresh black pepper to taste
Fresh lemon juice to taste
Fufu Pizza
Pesto Sauce
1/4 C. sun-dried tomatoes or 1 C. fresh diced tomatoes
1 C. feta cheese
1/2 C. Parmesan cheese
4 pita breads
Extra virgin olive oil
In a food processor, put the basil leaves and half of the extra virgin olive oil, blend well. Stop processor, add pine nuts and blend. Stop processor and add cheese, remaining extra virgin olive oil, black pepper, garlic and lemon juice. Puree well. Stop and taste. If necessary, add more garlic and pepper. Keep covered and refrigerated.
To prepare pizza, spread pesto sauce evenly over pita breads, followed with feta cheese and tomatoes. Sprinkle Parmesan cheese over tops of pizzas. Bake in preheated 425 degree F oven for approximately 5 min., or until cheese has melted and bread is hot and slightly crispy. Sprinkle extra virgin olive oil on tops, slice and serve.
