Quick Meals- Salad and Pizza :: Dinner Pizzas
5 to 8 oz. chicken breast, boned and
skinned, cut into 1/4-in. strips
1 (10- to 12-in.) pre-baked pizza crust
1 C. thick and chunky salsa, med. heat
1 C. shredded sharp Cheddar cheese
1/2 med. red bell pepper, cut into 1/4-in. strips
1/2 med. green bell pepper, cut into 1/4-in. strips
1 sm. onion, thinly sliced
1 tsp. ground cumin or a little more
1 tsp. chili powder or a little more
1/4 C. chopped cilantro (optional)
1 tsp. canola oil
1/4 tsp. salt
Heat oil in lrg. skillet, add peppers and onion. Cook and stir for about two min. until crisp-tender. Remove from skillet. Add chicken to skillet, season with cumin, chili powder and salt; cook and stir over med.-high heat 3 to 5 min., until juices run clear.
Place pizza crust on baking sheet. Spread salsa over crust. Top with chicken, pepper/onion mixture, cilantro and cheese. Bake in preheated 450 degree F oven for 10 to 15 min. until heated through.
