Circles of flaky filo create a base for baked chocolate-mango cream. The stacks of filo cookies and baked cream are garnished with raspberry and mango coulis and chocolate sauce.

1/4 pkg. filo dough
1 C. clarified butter
1 C. sugar
1/2 C. turbinado sugar
1/2 C. (3 oz.) grated bittersweet chocolate

Chocolate-Mango Cream
1 C. half-and-half
1 vanilla bean, split
12 egg yolks
1 qt. (4 C.) heavy (whipping) cream

6 oz. semi-sweet chocolate, chopped
