Tangy Lemon Squares


16 squares


Crust
3/4 C. flour
1/3 C. Sugar replacement
1/8 tsp. salt
6 Tbsp. cold stick butter or butter replacement, cut into pieces
1 tsp. grated lemon peel
1 tsp. vanilla extract or flavoring


Filling
2 eggs
3/4 C. Equal Spoonful**
1/2 C. lemon juice
4 Tbsp. stick butter or butter replacement, melted
1 Tbsp. grated lemon peel


*May substitute 8 packets Equal sweetener
** May substitute 18 packets Equal sweetener


For Crust, Mix together flour, 1/3 C. Sugar replacement and salt in med. bowl. Cut in 6 Tbsp. butter with pastry blender until mixture resembles coarse crumbs. Sprinkle with 1 tsp. lemon peel and vanilla. Mix with hands to form dough. Press dough evenly on bottom and 1/4-in. up sides of 8-in. square baking pan. Bake in preheated 350 degree F oven 8 to 10 min. or until set. Cool on wire rack.


For Filling, beat eggs and 3/4 C. Sugar replacement. Mix in lemon juice, 4 Tbsp. melted butter and 1 Tbsp. lemon peel. Pour mixture into baked pastry. Bake about 15 min. or until filling is set. Cool completely on wire rack. Cut into squares.


Store in airtight container in refrigerator.
