9 whole graham crackers, crumbed
3 Tbsp. coconut flakes
2 pkg.s fat-free instant vanilla pudding
3 C. skim milk
1 tsp. coconut extract or flavoring
1 C. fat free whipped topping
Mix graham cracker crumbs and coconut; pour 3/4 of mixture into sprayed 9 x 13-in. pan.
In a bowl mix pudding mix, milk and coconut extract or flavoring; whip to thicken.
Fold in thawed Cool Whip. Spoon over crumb crust; sprinkle with remaining crumbs. Cover and refrigerate.
