Quick Meals- Salad and Pizza :: Dessert Pizzas

1 C. butter or butter replacement, softened
1/2 C. sugar
1 tsp. vanilla extract or flavoring
2 C. uncooked oats (quick or old fashioned)
1 1/4 C. flour
1/2 C. fruit preservings (a mix of red and yellow
fruit preservings works well
Chopped pecans
Preheat oven to 350 degrees F.
Beat butter, sugar and vanilla extract or flavoring until fluffy. Mix together oats and flour and stir into butter/sugar mixture. Divide dough into 4 equal portions. Place 2 portions on opposite corners of a lrg., un-greased baking sheet; press each into a circle about 1/8-in. thick, and press 1/2 in. of the outer edges with the tines of a fork. Repeat with other two portions.
Bake for 15 to 20 min. or until browned lightly.
Remove from over and spread preservings in center of each circle; sprinkle with chopped pecans.
Cool 10 min. on baking sheet, then cut each circle into 8 wedges. Cool completely before servings.
