Patria Spiced Tropical Fruit Soup

Makes approximately 8 to10 servings


750ml bottle Muscat wine
30 coriander seeds
15 bay leaves
12 cloves
20 black peppercorns
4 star anise
1 cinnamon stick
34 oz. water
7 oz. sugar
5 fresh thyme sprigs
1 papaya, diced
1 mango, diced
1 pineapple, diced
1 strawberry papaya, diced
1 star fruit, diced


Mix together wine, spices, water and sugar in pot. Boil 10 min.; remove from heat. Add thyme, cover and chill. Strain.


Add diced fruit. Serve chilled with crystallized thyme.
