Soups for Salads :: Copy-Cat Soups

3 lb. potatoes, peeled and dice 1/2 x 1-in.
(weigh 3 lb. after peeling)
8 oz. chopped celery
2 1/2 qt. water
4 oz. chicken base
1/2 tsp. pepper
1 Tbsp. Jane\",s Crazy Salt ( I found it at Kroger)
1 1/2 qt. milk
4 oz.s melted margarine
l C. flour
In lrg. pot put first 7 ingredients in lrg. pot and simmer 20 min.
Add milk and bring to 170 degrees F.
In bowl blend melted margarine and flour till smooth then add 1 qt. of soup broth and blend. Using wire whip add back to pot and blend well. Simmer 20 min.
Makes approximately 12 (10 oz.) servings.
