Tangy Apple Slaw

4 C. shredded green cabbage
1 C. shredded carrots
1 C. chopped unpeeled apple (1 med.)
1/2 C. thinly sliced red or green bell pepper strips
2/3 C. lite mayonnaise
1/3 C. reduced fat sour cream
3 Tbsp. Sugar replacement *
1-1/2 Tbsp. Dijon mustard
1 Tbsp. lemon juice
1/8 tsp. pepper


*May substitute 4 1/2 packets Equal sweetener


Mix together cabbage, carrots, apple and pepper strips in med. size bowl.


Mix together mayonnaise, sour cream, Sugar replacement, mustard, lemon juice and pepper in sm. bowl; stir until well blended. Spoon Equal mixture over cabbage mixture; gently toss to Mix together. Refrigerate, covered, 1 to 2 hr. to allow flavors to blend.
