Southwestern Turkey Soup


1 tsp. extra virgin olive oil
1/2 C. chopped onion
1 C. coarsely chopped cooked turkey
1 1/2 tsp. ground cumin
1/4 tsp. garlic powder
1/8 tsp. hot pepper sauce
1 (16 oz.) can navy beans, drained
1 (15 oz.) can garbanzo beans, drained
1 (15 oz.) can white whole kernel corn, drained
1 (16 oz.) can chicken broth
1 (4.5 oz.) can chopped green chiles, drained
3/4 C. quick-cooking wild rice, uncooked
7 Tbsp. sour cream


Heat extra virgin olive oil in a Dutch oven over med.-high heat; add chopped onion and saute 5 min. Stir in chopped turkey and next 8 ingredients (turkey through chiles). Bring to a boil; cover, reduce heat, and simmer 15 min.


Stir in wild rice, and simmer 5 min.


Serve soup with sour cream.


Makes approximately 7 servings.
