Soups for Salads :: Chicken and Poultry Soups
1/2 med. chicken breast (4 oz.)
2 C. water
1/4 C. chopped onion
1 sm. bay leaf
1/2 tsp. salt
Dash of pepper
1 med. ear fresh corn
1/4 C. noodles
1/4 C. chopped celery
2 Tbsp. chopped parsley
Mix together chicken breast, water, onion, bay leaf, salt and pepper to saucepan. Bring to boil. Reduce heat and simmer 30 min.
Remove chicken and skin. Cut up meat and add to soup.
Cut kernels from corn. Add corn, noodles, celery and parsley to soup. Simmer about 10 min. Season with salt and pepper.
