Super Salad Recipes :: Chicken and other Poultry Salads
Servings 8.
1 1/4 lb. smoked chicken breast, diced
1 red onion, chopped
1 C. chopped celery
2 1/2 C. sweet cherries, halved and seeded
1/2 C. low fat mayonnaise
1/4 C. Dijon mustard
3 Tbsp. chopped fresh thyme
1 Tbsp. chopped fresh dill
4 Tbsp. extra virgin olive oil
4 lb. baby greens, rinsed and dried
1/2 C. chopped toasted pecans
Mix chicken, onion, celery, cherries in lrg. bowl.
In sm. bowl Mix together mayonnaise, mustard, thyme, dill, extra virgin olive oil and vinegar; mix to Mix together. Toss greens and pecans into cherry chicken mixture. Pour mayonnaise dressing over the top, then toss again. Add salt and pepper to taste.
