Super Salad Recipes :: Chicken and other Poultry Salads
1 1/2 lb. boneless smoked chicken, cut into 1/2 in. dice
1 1/2 C. thin sliced celery
1 med. size pineapple, peeled, cored and cut into bite-size pieces
2/3 C. mayonnaise
1 1/2 tsp. Dijon mustard
2 Tbsp. raspberry or sherry vinegar
Salt and freshly ground black pepper
1 C. coarsely chopped roasted macadamia nuts
Celery leaves for garnish
In a mixing bowl, Mix together the chicken, celery and pineapple.
In a sm. bowl, Mix together the remaining ingredients except the macadamia nuts and celery leaves. Toss with the ingredients in mixing bowl. Refrigerate until servings time.
Garnish with the nuts and celery leaves.
