Super Salad Recipes :: Chicken and other Poultry Salads
2 lb. chicken pieces
2 C. chicken broth
1 C. diced pineapple
2 stalks celery, sliced diagonally
1 C. mayonnaise
2 Tbsp. light cream
1/2 tsp. celery salt
1/4 tsp. pepper
1/2 C. toasted sliced almonds
Put chicken in a lrg. saucepan. Add chicken broth. Bring to a boil and simmer over low heat for 35 to 45 min.
Remove chicken from pan and allow to cool. Discard the skin and bones. Chop the chicken meat into sm. pieces, and place in a lrg. bowl. Add the pineapple and celery. In a sm. bowl, Mix together the mayonnaise, cream, celery salt and pepper. Add the mayonnaise mixture to the chicken and toss to Mix together. Chill for at least 30 min.
Sprinkle almonds over top just before servings.
