Starters and Snacks :: Butters and Spreads
Serve warm over pancakes.
1 (20 oz.) can unsweetened
crushed pineapple, undrained
1/3 C. sugar
1 Tbsp. tapioca
1/2 tsp. lemon juice
1/4 tsp. ground ginger
Mix together all ingredients in a med.-size saucepan; let stand 5 min. Bring to a boil over med. heat; reduce heat and simmer, stirring occasionally, 2 min. or until thickened. Store sauce in refrigerator.
Makes approximately 2 C..
