This pure is delicious when served with hot biscuits, scones, pancakes, waffles or French toast.
1 1/4 C. apricot nectar
1 (6 oz.) pkg. dried apricots
6 Tbsp. sugar
Stir all ingredients in a heavy med. size saucepan over med. heat until sugar dissolves and mixture simmers. Cover and cook until apricots soften, 6 min. Remove from heat and cool slightly.
Transfer mixture to a food processor or blender and pure until almost smooth (there will be sm. bits of apricot remaining). Remove and refrigerate. Holds 1 week in refrigerator.
Makes approximately 1 1/2 C..
