3/4 lb. extra-lean lean ground beef
1 slice whole wheat bread, crumbled
1/4 C. salsa
4 cloves garlic, chopped finely
2 (8 oz.) cans tomato sauce
3 C. hot cooked rice
Mix all ingredients except tomato sauce and rice. Shape into sixteen 1 1/2-in. meatballs.
Spray 10-in. nonstick skillet with nonstick cooking spray; heat over med.-high heat. Place meatballs in skillet; spray meatballs with nonstick cooking spray. Cook until meatballs are brown on all sides. Stir in tomato sauce. Heat to boiling; reduce heat to low. Cover and simmer about 20 min., stirring occasionally until meatballs are no longer pink in center.
Serve over rice.
