Baked Chimichangas


8 oz. ground 90% lean beef or turkey
1/2 C. chopped onion
1/2 tsp. minced garlic
1 C. chunky salsa
1 tsp. chili seasoning
8 (6-in.) flour tortillas
1/4 C. no-fat sour cream


Preheat oven to 475 degrees F. Spray a 9 x 13-in. baking dish with extra virgin olive oil-flavored cooking spray.


In a lrg. skillet sprayed with extra virgin olive oil-flavored cooking spray, brown meat and onion. Stir in garlic, 1/2 C. salsa, and chili seasoning. Lower heat and simmer for 5 min. Spoon 1/4 C. meat mixture into center of each tortilla. Lightly spray tops with butter-flavored cooking spray.


Bake for 12 to 14 min. or until golden brown.


For each servings, place a chimichanga on a servings plate, spoon 2 Tbsp. salsa and 1 Tbsp. sour cream over top.


Servings 4 (2 each). Servings size (2 chimichangas)
