Mediterranean Tuna Salad


Ingredients:


crumbled grilled tuna
or
2 6-ounce cans water-packed white tuna, drained
1 clove minced garlic
1 tbsp wine vinegar
2 tbsp orange juice
1/4 cup olive oil
salt
black pepper
2 ribs diced fennel
2 tomatoes, seeded & diced
1 tsp orange zest, finely grated


Directions:


Whisk the garlic, vinegar, orange juice, olive oil, salt & pepper together in a medium sized bowl.
Add the tuna, fennel, tomatoes and zest and toss well.
Mediterranean Tuna Salad is best served with French bread.
