Taco Salad
Ingredients:
1 pound chorizo sausage, cut into bite-sized chunks or
1 pound ground-beef seasoned with ground cumin, salt & pepper
1 head ice-berg lettuce, washed, dried, and thinly sliced
2 large ripe tomatoes, coarsely chopped
3 scallions, coarsely chopped or 1 medium onion, diced
1 pound cheddar cheese, shredded
1 cucumber, peeled, seeded & diced ( optional )
15 ounces taco chips, broken into bite-sized pieces
1 cup store-bought tomato salsa
Directions:
Cook the sausage or beef in a skillet over medium heat, stirring
occasionally for 5 to 7 minutes or until well browned.
When the meat is done, drain it and set it aside.
Combine the lettuce, tomatoes, scallions, cheese and taco chips
( and cucumber if you're using it ) in a large bowl.
Add the meat and salsa, toss well and serve.
