Sesame Spinach Salad


Ingredients:


1 pound flat-leaf spinach, stemmed & washed
1 1/2 tbsp sesame seeds
2 tsp sesame oil
2 tsp soy sauce
1/2 tsp 1 tsp sugar or honey


Directions:


Boil the spinach in lightly salted water for 30 seconds or until just tender.
Drain the spinach in a colander, rinse with ice water, and blot it dry with paper towels.


Lightly toast the sesame seeds in a dry skillet over medium heat for two minutes.
Combine half the sesame seeds and the sesame seed oil, sugar and soy sauce in a bowl.
Whisk until the sugar has dissolved then add the spinach and toss well.


Season to taste with the soy sauce or sugar ( this salad should be a little salty and a little sweet ).
Sprinkle the salad with the rest of the sesame seeds and serve at room temperature or slightly chilled.
