Seafood Salad with Oranges

Mix the seafood, vegetables, orange segments and orange juice in a large bowl and have a pleasant feel as being on the Pacific sea beach.


Ingredients:


Chinese cabbage leaves
4 cups romaine lettuce, shredded
2 8-ounce packages frozen crab-flavored fish pieces, thawed & cut into 1" pieces
or
2 8-ounce packages frozen, peeled, cooked shrimp, thawed
3 oranges, peeled & sectioned
1 small avocado, seeded, peeled & sliced
3/4 cup Thousand Island Dressing
orange slices
lime slices
fresh thyme ( optional )


Directions:


Line 4 plates or salad bowls with Chinese cabbage leaves.
Pile some lettuce into the center of each plate or bowl.
Lay the fish or shrimp over the lettuce and add the dressing.
Arrange the orange and avocado on the plate.
Garnish the salad with the remaining fruit.
