Crab Louis


Ingredients:


1 head Boston or Bibb lettuce leaves, washed & dried
1 cup Red Leaf lettuce, cut into thin strips, washed & dried
2 cups cooked lump crabmeat
2 hard-boiled eggs, sliced
fresh chives, snipped
1 cup Sauce Louis ( *see recipe below )


Directions:


Arrange the lettuce leaves on a platter or salad bowl followed by the lettuce strips.
Heap the crabmeat on top of the lettuce and pour the Sauce Louis over the lettuce.
Garnish the salad with eggs and chives and serve immediately.


Sauce Louis


Ingredients:


1 cup mayonnaise
1/4 cup heavy cream
1/4 cup chili sauce
1/4 cup scallions, finely chopped
2 tbsp fresh lemon juice
1 tsp Worcestershire sauce
salt
ground black pepper


Directions:


Stir the ingredients together in a small bowl until the dressing is well blended.
Salt and pepper to taste. Use the dressing at once or cover and refrigerate it.
