Scallop & Vegetable Salad


Scallop and vegetable salad is a delightful salad that can be a meal in itself. Served with a hearty steak and potatoes, you have the makings of a wonderful evening.


Ingredients:


1 pound fresh Bay scallops
½ c juice from 1 lime
2-T scallions, chopped
1-T coriander, chopped
1-T oil
1 garlic clove, sliced
¼ t salt
1 shake Tabasco sauce
1 tiny head Bibb lettuce
1 red bell pepper cut up
1 tomato cut into strips
1 cucumber, sliced thinly


Directions:


Take your scallops, lime juice, scallions, coriander, oil, garlic, salt, and Tabasco put into a large bowl and cover. Put into refrigerator overnight. Stir it every now and then.
Take your leaves and cover a plate, now spoon the scallop mixture onto the lettuce and garnish with coriander if you like.


If you do not like scallops, this recipe can be made with any seafood you like, especially crab, crayfish, lobster, or shrimp.
