Pasta & Vegetable Salad
An Italian Tasty mixture of boiled and cooked pasta alongwith different vegetables tossed with mayonaisse dressings. Serve chilled.
Ingredients:
8 ounces bow past
8 ounces broccoli, broken into florets
8 ounces beans, cut diagonally
4 ounces snow peas ( mange tout ), topped & tailed
8 ounces cherry tomatoes
1/3 cup olive oil
1/4 cup white wine vinegar
2 tsp mustard powder
1 tsp turmeric
freshly ground black pepper
snow pea sprouts or herbs to garnish
Directions:
Bring a large pot of water to a rapid boil. Add the pasta and cook
it until just tender.
When it is ready, drain it well and rinse it in cold water.
Halve the tomatoes and set them aside.
Plunge the broccoli, beans and snow peas into the boiling water
then rinse them immediately in cold water.
Mix the vinegar, olive oil, mustard, black pepper and turmeric
in a small bowl and beat it well.
Toss the pasta, dressing and vegetables together well in a large
bowl.
Top the salad with the sprouts or herbs when it is ready to serve.
