Nally's Pasta Salad
(Insalata Di Pasta Alla Nally )
Ingredients:
2 pounds very ripe cherry tomatoes, stemmed & quartered
1/2 cup fresh basil leaves, torn
1 clove garlic, minced
1/4 cup extra-virgin olive oil
1 tbsp balsamic vinegar
1 tsp sea salt
1 pound dried penne or fusilli pasta
Directions:
Combine the tomatoes, basil, garlic, olive oil, vinegar and salt
in a large bowl.
Cover the bowl with plastic wrap and let it marinate for no less
than one but no more than two hours at room temperature, preferably
in direct sunshine.
Cook the pasta according the directions on the package in a large
pot of salted boiling water.
When it is done, drain the pasta and rinse it under cold water.
Set it aside until it is dry.
Toss the pasta and salad mixture together and serve at room temperature.
