Octopus Salad
This Australian dish is very popular and is usually a dish of the rich and famous. Mainly since Octopus is not plentiful in other parts of the world.
Ingredients:
1 Octopus
1 cup olive oil
juice of 2 lemons
salt and pepper to taste
3T each of minced garlic, shallots, chives and parsley
1 Salad, whatever kind you like
Directions:
Prepare your octopus and precook it. Now take the oil, the herbs and mix them together. The dressing should be thick with the herbs. When the octopus is tender, drain and cut it into chunks. Hurry while it is still hot, fold into the dressing. Serve the salad with plenty of bread.
Preparing the octopus:
Make a cut above and below the eyes. Throw this part away. Make a cut in the back of the head and turn the head inside out. Remove all the contents and throw away. In the center of the star shaped tentacle is the beak, push on this all the way through the head. Skinning will be easier after cooking if you wish to wait. |
