Greek Salad


Ingredients for Salad:


2 large heads romaine lettuce
8 cherry tomatoes
1/2 cup Feta cheese, coarsely crumbled
6 thin slices red onion
1/2 cucumber, peeled & sliced
8 Kalamata olives, pitted
3/4 cup celery hearts, diagonally sliced
4 scallions, cut into 1" pieces
8 firm radishes, sliced
1 2-ounce can anchovy fillets, rinsed, patted dry & halved lengthwise
( optional )

Directions for Salad:


Toss the ingredients well in a salad bowl.


Ingredients for Dressing:


7 tsp olive oil
2 tbsp fresh lemon juice or red wine vinegar
1 tsp finely minced garlic
1 tsp dried oregano
salt
pepper


Directions for Dressing:


Mix the ingredients well in a small bowl.
Drizzle the dressing over the salad and serve it immediately on large chilled plates.
