Waldorf Salad on Rye


Ingredients ( serves 4 ):


3/4 pound diced baked ham or smoked turkey breast
1 large Granny Smith apple, grated
2/3 cup walnuts, coarsely chopped
3 tbsp mayonnaise
1 tsp apple cider vinegar
8 slices rye bread
iceberg lettuce


Directions:


Mix the meat, apples, nuts, vinegar and 2 tbsp of mayonnaise in a large bowl.


Spread 1 tbsp of mayonnaise on eight slices of rye bread.
Place a lettuce leaf on four of the slices with a mound of salad, then top with the remaining slices of bread.
